Brown Sugar Plum Cobbler Recipe

This delicious brown sugar plum cobbler recipe is sure to be a hit during the late summer & early fall!

In early October, I was gifted a large box filled to the brim with juicy fresh plums! The kids and I LOVE snacking on plums, but I knew that we wouldn’t be able to consume this many before they started to go bad. While we were able to eat a lot of them, there were several left over. In the spirit of reducing food waste, we used the over-ripe plums in this delicious brown sugar plum cobbler recipe!

What Plums Can Be Used for Plum Cobbler?

Whether you have an orchard of plum trees, your local farmers market offers fresh plums, or you found a deal on juicy plums at the grocery store, you can make this delicious recipe!

I used black plums to make this cobbler. This is one of the most common of the plum varieties and it has a dark skin with a yellowish color inside. There are plenty of other varieties of yellow plums, red plums, and deep purple plums. All of them can be used in this cobbler recipe. Even the ones that are too tart for eating fresh. 

Brown Sugar Plum Cobbler Recipe: The perfect Dessert for Late summer and early Fall!

The easy plum cobbler is the perfect dessert for late summer or early fall! You can also try this recipe with other fruits like peaches, berries, or even apples.

Plum Cobbler Ingredients

Filling

  • 7-10 plums (quartered)
  • 1/2 cup brown sugar*
  • 1/4 cup flour
  • 1 TBSP vanilla extract

Topping

  • 1 1/2 cups flour
  • 1/3 cup brown sugar*
  • 1 1/2 tsp baking powder
  • 1/2 tsp Redmond Real Salt*
  • 8 TBSP cold butter*
  • 1/2 cup milk
  • 1 egg white + sprinkle of sugar

*Recipe Notes

  • You can make homemade brown sugar with white sugar and molasses. For the filling, use ½ cup white sugar + ½ TBSP molasses. For the topping, use ⅓ cup white sugar and ⅓ TBSP molasses.
  • Any salt that you have available will work, but I highly recommend Redmond Real Salt as it contains the trace minerals that are removed from most table salt. 
  • Cold butter will cut in and make a crumbly dough. If the butter is warm, you won’t get the right consistency. 

Plum Cobbler Instructions

STEP ONE: Prep & Preheat

Preheat the oven to 350 degrees F and grease a 9×13 pan, cast iron skillet, or pie dish. 

STEP TWO: Prepare the Cobbler Filling

Wash, quarter, and pit the plums. Then place the quartered plums in a medium to large mixing bowl.

Add the brown sugar (or white sugar + molasses), flour, and vanilla extract. Mix together and transfer the plum filling mix into your prepared baking pan.

STEP THREE: Make the Plum Cobbler Topping

In a separate large bowl, combine the dry ingredients (flour, brown sugar, baking powder, and salt) until they are all mixed together well.

Cut the pats of butter into the flour mixture with a pastry blender (pastry cutter), a fork, or your hands until crumbly. I prefer to start cutting in with a fork and then I transition to using my hands to make sure the butter makes it into every last bit of flour.

Stir in the milk until a soft dough forms. 

STEP FOUR: Add the Topping to the Cobbler

Drop the dough onto the plum filling. 

Everyone seems to have a different preference for this. Some like to spread the dough across the top, some spoon the dough into biscuit shapes (like a pot pie), but I like to drop it unevenly across the top. Allowing it to fall wherever it wants to in between the plums.

STEP FIVE: Add an Egg Wash

This step is optional, but it adds a little bit of extra flavor and color to the plum cobbler topping. 

Whisk an egg white and brush it over the top of the dough. Sprinkle a little sugar (white, brown, or even cinnamon sugar) over the top.

STEP SIX: Bake the Plum Cobbler

Bake in the preheated oven for 45 minutes or until the cobbler topping is golden brown.

STEP SEVEN: Enjoy!

Remove from the oven and serve immediately. Top this warm delicious plum cobbler with a scoop of vanilla ice cream or enjoy it as is! You can store any leftover cobbler in the fridge for a few days until you are able to finish it off.
