Vanilla Butter Pancake Syrup


  • 1/2 cup water or milk {less if you want thicker syrup}
  • 1 cup white granulated sugar
  • 1 TBSP honey
  • 1/4 cup unsalted butter
  • 1/2 tsp baking soda {can sub 1 1/2 tsp baking powder}
  • 1 1/2 tsp vanilla extract


  • Add water or milk, sugar, honey, and butter to a large sauce pan. {Reduce the amount of water/milk if you want a thicker syrup.}
  • Boil for 2-3 minutes
  • Remove the sauce pan from heat and add the baking soda and vanilla extract. Add the baking soda slowly because it will cause the entire mixture to bubble up. {If you do not have baking soda, you can use 1 1/2 tsp baking powder instead.} 
  • Whisk to incorporate all ingredients.
  • The mix bubbles when stirred so you can let it rest for a few minutes to allow the bubbles to settle.
  • You can use this syrup immediately over homemade fluffy pancakes or store in a jar in the fridge. If you like warm syrup, you can reheat it or use it straight out of the refrigerator.
