Salmon Lemon Butter en Croute


Salmon en Croute

  • 2 salmon fillets
  • 2 2 puff pastries Store-Bought or Homemade
  • 1 egg
  • 1 TBSP cold water

Parsley Lemon Butter

  • 1/2 cup unsalted butter
  • 1 TBSP Parsley
  • Juice from half of a lemon


  • Preheat oven to 375 degrees F.
  • Beat butter, parsley and lemon juice to make the flavored butter.
  • Place one fillet onto one piece of the puff pastry (2 triangles of the crescents).
  • Spoon a generous amount of the butter onto the fillet.
  • Place another piece of the pastry of crescent on top of the fillet.
  • Pinch the edges of the pastry to close them around the salmon. You can use a spoon to make fish scales on the pastry if you wish.
  • Make an egg wash by whisking one egg with one TBSP of cold water.
  • Brush the pastry with the egg wash for a crispy golden crust.
  • Let it chill in the fridge for 30 minutes.
  • Bake for about 20 minutes or until pastry is golden brown. Enjoy!
