Preheat oven to 375 degrees F.
Beat butter, parsley and lemon juice to make the flavored butter.
Place one fillet onto one piece of the puff pastry (2 triangles of the crescents).
Spoon a generous amount of the butter onto the fillet.
Place another piece of the pastry of crescent on top of the fillet.
Pinch the edges of the pastry to close them around the salmon. You can use a spoon to make fish scales on the pastry if you wish.
Make an egg wash by whisking one egg with one TBSP of cold water.
Brush the pastry with the egg wash for a crispy golden crust.
Let it chill in the fridge for 30 minutes.
Bake for about 20 minutes or until pastry is golden brown. Enjoy!
