Preheat oven to 350 F.
Cover a baking sheet with parchment paper or foil and spray it with a light coat of cooking oil.
Lay the saltine crackers out to cover the sheet.
Cook the brown sugar and butter over medium heat until boiling. Stir constantly to avoid scorching.
Remove the butter and sugar from heat and pour the mixture evenly over the crackers.
Sprinkle the chocolate chips over the warm cracker toffee.
Allow the chocolate chips to soften and then spread them out across the crackers.
Add a little sea salt and some sprinkles on top of the toffee.
Drizzle the caramel sauce over the top and wait for the chocolate to solidify.
Break the cracker toffee into pieces and store in the refrigerator. Enjoy!!
